Pour heavy cream, confectioners’ sugar and vanilla extract in a chilled bowl. Using a hand whisk or stand mixer, whip together until soft peaks form. Gently mix berries and whipped cream together with a rubber spatula. Place the tortillas in a non-stick frying pan over medium heat and heat until warm and soft. Remove from heat and put on a plate. Alternatively, wrap tortillas in a slightly damp paper towel. Warm the tortillas in a microwave for 15 seconds. Let cool slightly to avoid melting whipped topping. Distribute berry and cream mixture evenly between tortillas, covering half of the tortilla. Fold in half and drizzle with your favorite chocolate sauce. Top with additional berries.
